Ingredients
- (1 tbsp) Butter
- (3/4 cup chopped) Onion
- (1/4 cup chopped) Green bell pepper
- (1/2 cup chopped) Celery
- (3, minced) Garlic cloves
- (1 package) Pork Smoked Cajun Sausage
- (2 15.5 oz cans, or use fresh tomatoes) Diced Tomatoes
- (6 cups) Pastured Chicken Bone Broth
- (1/4 cup) Cajun Seasoning
- (2) Bay leaves
- (1/2 cup) Roux
- (1lb) Frozen Gulf Shrimp, thawed
- (1 cup, chopped) Okra (optional)
- (4 cups shredded) Chicken Breasts
- salt to taste
- cooked rice, for serving
- green onion for garnish
Directions
- In a large heavy-bottom pot, melt the butter, add in the onion, celery, and green bell pepper, and stir until soft (about 5 minutes). Add garlic and cook for 1 additional minute.
- Add the sausage to the pot and char (about 5 minutes). Add in diced tomatoes, chicken broth, cajun seasoning, and bay leaves. Stir together.
- Increase heat to high and bring to a boil. Once boiling, reduce to a simmer and simmer for 15 minutes, stirring occasionally. Add in the pre-made roux (we make ours out of pork lard or beef tallow and Guardian Grain's flour.), stir, and let simmer for 5 minutes.
- Add raw shrimp, shredded chicken breast, and okra. Return to a simmer. Cook for 5 minutes or until shrimp are opaque. Salt to taste. Serve with rice and garnish with green onions. Enjoy!
