Spiced Cocoa Lamb Chop
One doesn’t usually think cocoa when cooking lamb but don’t worry the lamb can take it! A great combination is fire and chocolate so don’t be alarmed when the cocoa rubbed chop is very dark. Just be sure to use your thermometer and remember to leave the grill in a timely fashion. Lamb should be left rare for the best flavor, but it needs a little help in the breaking down of proteins to make it a tender delicious meal.

Ingredients

  • (1/2 cup) Cocoa
  • (1/8 cup) Kosher Salt
  • (1 tsp.) Red Pepper Flakes
  • (1/4 tsp.) Ground Cloves
  • (1 tbsp.) Sugar
  • (1) Lamb Loin Chops

Directions

Combine the dry ingredients into a food processor or use a mortar and pestle to grind them into a fine powder. Rub the chops with the powder and place in the refrigerator for at least 4 hours or overnight. Bring them to room temperature before grilling. Grill to a rare/medium rare and be sure to use a thermometer. Serve and enjoy!
