Lemon Chicken Quinoa Salad

This zesty, Greek style salad bowl features our Pasture-Raised Ground Chicken and fresh Mediterranean inspired veggies. A quick & easy make ahead salad that is perfect for meal prep and includes a diverse source of colorful, whole foods that make for a simple combination of something both grounding and bright!

Ingredients
- (1 lb.) Ground Chicken
- (1 Cup, dry) Quinoa
- (1/2 or (2 Cups), chopped) English cucumber
- (1 Cup, halved) Cherry tomatoes
- (1 Cup, chopped) Fresh parsley
- (1/2 Cup, sliced) Green onions
- (1/4 Cup, sliced) Kalamata olives
- (1/3 Cup, crumbled) Feta cheese
- (4 oz., diced) Fresh mozzarella cheese
- (1 Cup, chopped) Red onion
- (1/4 Cup, plus more for chicken) Extra virgin olive oil
- (1/4 Cup or (1-1 1/2 lemons)) Fresh lemon juice
- (to taste) Sea salt
- (to taste) Black pepper
Directions
- Preheat a cast iron skillet over med-high heat.
- Coat preheated skillet with extra virgin olive oil then carefully add ground chicken.
- Season with salt and pepper.
- Once browned, remove from skillet and set aside.
- Cook quinoa according to package directions. Let stand, covered for 5 minutes, then transfer to a large salad bowl.
- Allow quinoa to cool for approximately 10-15 minutes before adding the ground chicken, cucumbers, tomatoes, red onions, parsley, green onions, olives, feta and mozzarella cheese.
- Whisk the olive oil and lemon juice together and pour over salad. Season with salt and pepper and toss to combine. Cover and chill at least 30 minutes before serving.
