Lemon Chicken Quinoa Salad
This zesty, Greek style salad bowl features our Pasture-Raised Ground Chicken and fresh Mediterranean inspired veggies. A quick & easy make ahead salad that is perfect for meal prep and includes a diverse source of colorful, whole foods that make for a simple combination of something both grounding and bright!

  • (1 lb.) Ground Chicken
  • (1 Cup, dry) Quinoa
  • (1/2 or (2 Cups), chopped) English cucumber
  • (1 Cup, halved) Cherry tomatoes
  • (1 Cup, chopped) Fresh parsley
  • (1/2 Cup, sliced) Green onions
  • (1/4 Cup, sliced) Kalamata olives
  • (1/3 Cup, crumbled) Feta cheese
  • (4 oz., diced) Fresh mozzarella cheese
  • (1 Cup, chopped) Red onion
  • (1/4 Cup, plus more for chicken) Extra virgin olive oil
  • (1/4 Cup or (1-1 1/2 lemons)) Fresh lemon juice
  • (to taste) Sea salt
  • (to taste) Black pepper


  • Preheat a cast iron skillet over med-high heat.
  • Coat preheated skillet with extra virgin olive oil then carefully add ground chicken. 
  • Season with salt and pepper.
  • Once browned, remove from skillet and set aside. 
  • Cook quinoa according to package directions. Let stand, covered for 5 minutes, then transfer to a large salad bowl.
  • Allow quinoa to cool for approximately 10-15 minutes before adding the ground chicken, cucumbers, tomatoes, red onions, parsley, green onions, olives, feta and mozzarella cheese.
  • Whisk the olive oil and lemon juice together and pour over salad. Season with salt and pepper and toss to combine. Cover and chill at least 30 minutes before serving.
