Indian Spiced Lamb Lollipop Chops

Ingredients
- (10-12 chops) Lamb Rib Lollipop Chops
- (1 cup) Greek Yogurt
- (1/2 cup) Heavy Cream
- (1/2 cup) Lemon Juice
- (1 Tbsp.) Garam Marsala
- (1 Tbsp.) Curry Powder
- (1 Tbsp.) Paprika
- (1 Tbsp., minced) Ginger
- (1 Tbsp., minced) Garlic
- (1 Tbsp.) Vinegar
- (1 tsp.) Salt
Directions
In a medium sized mixing bowl, combine all marinade ingredients and whisk together.
Then, place your thawed lamb chops in a large ziploc bag or on a deep-sided baking sheet. (I recommend a baking sheet because a bone could pierce the ziploc bag)
Cover the chops in the marinade and let sit in the fridge for at least 6 hours. (More is better)
This marinade is good for 10-12 chops so if you are only cooking for two, you can half the amounts listed in the ingredients.
Once you are ready to cook, place a cast-iron pan over medium-high heat or grill at 375-400 degrees.
Cooking these only takes a few minute per side and they are best cooked at medium-rare to medium.
Lamb always pairs well with a fresh side salad. Serve and enjoy!
