Herb-Marinated Lamb Rib Chops

This is a great marinade recipe that can be used for any cut of lamb.

Ingredients
- (1 Tbsp.) Fresh Mint
- (3 Tbsp.) Olive Oil
- (1 Tbsp.) Herbs de Provence
- (2 Cloves, minced) Garlic
- (1 (Juice of)) Lemon
- (4) Lamb Rib Lollipop Chops
Directions
Mix the lemon juice, fresh mint, 2 tbsp. olive oil, herbs de provence and minced garlic in a ziploc bag. Add the chops and let marinate for 30 min to 1 hour in the fridge.
- Heat 1 Tbsp. of olive oil on medium-high heat in a cast iron pan.
- Add chops to the pan and sprinkle with a thin layer of herbs de Provence.
- Saute on medium heat for 6 minutes. Flip chops to the other side and cook for another 6 min for medium rare.
- Remove from pan, let rest for 5 minutes and serve with some roasted veggies. Enjoy!
