Lamb heart can be either slow cooked or cooked quickly. Keep in mind that it's very lean and can dry out and become tough if not handled properly.

For a smoky, satisfying bite, marinate lamb hearts with garlic, rosemary, and a splash of lemon juice. Then skewer and grill just enough. Heart kabobs pair well with fresh herbs and a tangy yogurt sauce. 

For a rustic dish, brown diced lamb heart with onions and spices in a pan. Then transfer to a slow cooker. Add a liquid like wine or broth and some root veggies. Cook on low for 6-8 hours. Then, serve over rice or warm flatbreads.

Store and Thaw

Will last a year in the freezer. Thaw in a bowl of water or in the fridge. Once thawed, will last 1-2 days in the fridge.
