When prepared properly, kidney can be tender and delicious. Here's how to do it:

  1. Remove the outer membrane and white core (fatty part in the middle).
  2. Cut into bite size pieces.
  3. Soak in cold water with a little vinegar or lemon juice and a bit of salt for an hour. This helps remove off-putting odors or flavors.
  4. Boil for 2-3 minutes to further remove anything off-putting.
  5. Then quickly pan fry in butter until just cooked, about 4-8 minutes.
  6. You can deglaze the pan with red wine or cream, and finish with some fresh herbs.
