Regen Guardian Grains Italian Pasta Salad!

Ingredients

  • (1 lb (2- 8 oz. bags)) Uncooked Guardian Grains Pasta
  • (3 Cups) Cherry Tomatoes, cut in half
  • (8 oz.) Fresh Mozzarella Cheese Balls, cut in half
  • (1 lb. Cut into Bite Sized Pieces) Beef Smoked Bologna
  • (3/4 Cup) Kalamata Olives, sliced
  • (3/4 Cup) Pepperoncini (optional)
  • (1/2 Cup) Sliced Red Onion
  • (1/2 Cup) Fresh Parsley, chopped

For the Italian Pasta Salad Dressing:

  • 3/4 cup Olive Oil
  • 1/4 cup White Vinegar
  • 1/4 cup Water
  • 1-2 Tbsp. Coarse Sea Salt
  • 2 cloves Garlic, minced
  • 1 Tbsp. Raw & Unfiltered Honey
  • 2 tsp. each Dry Oregano and Dry Basil
  • Black Pepper to Taste
  • Fresh Herbs if you have them! I add fresh parsley, chives and basil from my garden.

  1. Cook pasta according to package directions. Allow to cool slightly and toss with a little olive oil to prevent sticking.
  2. Blend up the dressing, or shake together in a jar.
  3. Toss all ingredients together. 
  4. Keep in fridge for 2-3 days. I think it actually tastes best the day after you make it; after the flavors have a chance to meld!
