Pressure Cooker Autumn Apple Chicken

Fill the air with the cozy aroma of Autumn with this quick & easy pressure-cooker recipe featuring our pasture-raised Chicken, orchard apples, homemade barbecue sauce and Cider from Cottonwood Cider House.

Ingredients
- (4) Chicken Drumsticks
- (to taste) Salt
- (to taste) Pepper
- (1 Tbsp.) Beef Tallow
- (1/2 Cup) Apple Cider
- (chopped) Onion
- (1/3 Cup) Barbecue Sauce
- (1 Tbsp.) 1# Honey
- (2 cloves, minced) Garlic
- (2, chopped) Apples
- (1/4 tsp.) Chili Powder
- (1 tsp.) Mustard Powder
- (1/4 tsp.) Paprika
- (1/4 tsp., dried) Sage
- (1/4 tsp., dried) Thyme
Directions
- 1. Season chicken with salt and pepper. Select sauté or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add Tallow. When Tallow is melted and hot, brown chicken; remove and keep warm.
- 2. Add cider, stirring to loosen browned bits from pan.
- 3.Stir in onion, barbecue sauce, honey, garlic, chili powder, mustard powder, paprika, sage, thyme and chicken. Press cancel. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure. (A thermometer inserted in chicken should read at least 165°).
- 4. Remove chicken; keep warm. Select sauté setting and adjust for low heat. Add apples; simmer, stirring constantly, until apples are tender, about 10 minutes. Serve with chicken over a bed of rice or quinoa and a side of your favorite vegetable. Enjoy!
