- (6 medium/large) Beets
- (1/4 cup) Dill
- (3 Tbsp.) Olive Oil
- (2 Tbsp.) Balsamic Vinegar
- (1 Tbsp.) Lemon Juice
- (2 tsp.) Paprika
- (To Taste) Salt & Pepper
- Cut the ends and peel the beets.
- Cut the beets into small cubes and put into foil.
- tear the tender leaves of the dill and add them on top of the beets.
- Coat with the mix of olive oil.
- Season with salt, pepper and paprika.
- Cook for 40 minutes @350 degrees.
- Sprinkle lemon juice & balsamic vinegar on top and serve.
