Creamy Ham & Potato Soup

This delectable soup was the perfect way for us to warm up after a long day of working outside in the North Dakota winter weather! ❄☃
This creamy soup will leave everyone's bellies full and mouths watering after every perfect spoonful of juicy ham and potato goodness.
Ingredients
- (1/2 Cup) Organic Pasture-Raised Butter
- (1) Organic Onion, finely chopped
- (1 Cup) Organic Carrots, diced
- (1/2 Cup) Organic Celery, diced
- (3 Cups) Organic Potatoes, peeled and diced
- (4 Cloves) Garlic, minced
- (3 Cups) Pork Smoked Ham
- (1/3 Cup) Guardian Grains All-Purpose Flour
- (3 Cups) Pastured Chicken Broth
- (2 Cups) Organic Pasture-Raised Heavy Whipping Cream
- (1 Pinch) Salt, if needed. (Adjust to your taste)
- Fresh Cracked Black Pepper
- (1 tsp.) Fresh Organic Rosemary
- (1 tsp.) Fresh Organic Thyme
Directions
- Heat the butter in a pot over medium heat. Sauté the onion, carrots, celery until beginning to soften (about 4 mins).
- Add the ham and potatoes, cook for 2 mins, then add the garlic, rosemary and thyme. Sauté until fragrant (about 30 sec.).
- Mix the flour through and cook for 2 mins.* If looking for a gluten free option, replace with almond flour.
- Stir in broth, mixing all the ingredients together. Increase heat and bring to a boil until potatoes and just fork tender, about 10-12 mins.
- Reduce heat to medium-low, add the milk and stir over the heat until thickened (about 5 mins).
