Chef Erika's Gnocchi with Bacon

Here is a simple recipe that uses some great seasonal vegetables.

Ingredients
- (1 #) Pork Bacon (Smoked and Uncured)
- (17 oz.) Gnocchi
- (3 cuops) Kale
- (2 cups) Butternut Squash
- (3 cloves) Garlic
- (2 tsp.) Ground Sage
- (1/4 cup) Chicken Stock
- (1/2 tsp.) Black Pepper
Directions
Cook bacon in a pan over medium heat until crispy. Remove from the pan and chop into pieces. Boil the gnocchi in water. Over medium high heat, add the minced garlic and chopped butternut squash to the bacon fat. Once soft, add the chopped kale (removed from the stem). Drain the gnocchi and add it and the chopped bacon into the pan. Then add the sage, black pepper, and chicken stock. Cook for another 5 minutes. Serve and enjoy!
