- (2 pkgs.) Chicken Breasts with Tenders
- (1.5 cups) Buffalo Wing Sauce
- (1) Onion, diced
- (1 block) Softened Cream Cheese
- (1/2 cup) Plain yogurt
- (1/2 - 3/4 cup) Chunky blue cheese dressing, or Ranch dressing
- (1.5 cups, or as desired) Cheddar Cheese, shredded
For the chicken:
Put the chicken breasts and tenders, buffalo wing sauce, and diced onion into a pressure cooker. (We use an Instant Pot).
Pressure cook for 10 min, then naturally release for 15-20 min.
After pressure is released, remove chicken from pot and shred with forks.
Return chicken soak in buffalo sauce while you prepare the crust and spread. This yields meat for this recipe, while also producing enough buffalo chicken for an additional meal.
For the spread (sauce) on Pizza:
Combine block of softened cream cheese, plain yogurt, blue cheese or ranch.
Blend with hand held mixer until smooth.
Pizza assembly: (we use homemade pizza dough but any pizza dough will work)
Spread sauce liberally on dough to the edges.
Add a generous portion of chicken, allowing sauce to drip onto dough and pizza.
Top with cheddar cheese.
Drizzle 3-4 spoonfuls of buffalo sauce drippings over the cheddar cheese.
Bake at 350 degrees for 20 minutes.
